Who is Chef Jun? The artisan behind the counter
Chef Jun trained in Japan, in establishments where sushi is taught through gesture rather than speech. After years perfecting edo-mae technique — vinegared rice, controlled fish maturation, knife precision — he chose Bordeaux to open the counter at Pavillon Yuasa.
At each service, Chef Jun works in front of only about ten guests: he selects fish based on the day’s catch, adjusts rice temperature, and composes a Kaiseki Sushi journey that follows the seasonal rhythm.
What is Kaiseki Sushi à la française at Pavillon Yuasa?
Kaiseki is the Japanese art of a multi-course meal in which each dish narrates a season. At Pavillon Yuasa, Chef Jun has fused this grammar with the practice of edo-mae sushi to create what we call Kaiseki Sushi: a sushi tasting menu served piece by piece at the counter, punctuated by seasonal amuse-bouches, a cooked fish course, and a Japanese dessert.
The ingredients are carefully selected and imported from Europe and Japan (including Yuasa soy sauce, Kinzanji miso, and blended miso).

At the counter, the experience begins before the first bite. Chef Jun works one meter from you: you hear the knife slicing fish, you see the hand shaping the rice, you sense the warmth of dashi simmering in the background.
With each piece, the chef’s hand reaches across the counter and the guest’s hand comes up to receive the sushi — this almost choreographed gesture is part of the dish itself. The room, built for about ten covers per seating, guarantees Chef Jun’s personal attention to every guest — the soul of a true chef’s table in Bordeaux.

Reservations are made online or by phone, and remain required, Tuesday through Saturday from 7:30 PM. Evenings often fill weeks in advance.
