The journey of Chef Yamano

Chef Yamano’s career began in 1987. He started out at Hisada House in Chiba, Japan, and worked his way up through the ranks in restaurants all over the world, including Salasala in New Zealand, MoshMoshi and Sakana in Bordeaux and Maya Bay in Monaco.

Thanks to this experience, the chef’s cuisine is unique, yet wonderful and attentive to its origins.

Chef Yamano is committed to taking a different approach to cooking fish than his French counterparts. For example, he has tried to remove the fishy smell from raw fish to make it more appealing.
