From Yuasa to Bordeaux: A Culinary Tale of Soy Sauce and Saint-Émilion

When Traditional Japanese Soy Sauce Meets Château Coutet of Saint-Émilion… At Pavillon Yuasa, every dish tells a story. But this time, the story begins long before the sushi is served. Its roots reach deep into a Japanese tradition nurtured in Yuasa — the birthplace of soy sauce — since 1881. And today, that story continues… here in France.

A Slow-Brewed Harmony: Japanese Soy Sauce Meets Bordeaux Terroir

Just a few kilometers from Saint-Émilion, a unique project was born — blending the expertise of SHINKO (CEO of Yuasa Soy Sauce Co., Ltd.) with the organic resources of Bordeaux’s Château Coutet to create an artisanal soy sauce made from 100% natural ingredients.

Hand-prepared koji (fermented wheat) and immense wooden vats filled with mash bring the soy sauce to life.
It’s a slow and powerful process, one that honors both time and nature.
So why not savor a soy sauce carefully brewed over many months?

Where Barrels of Bordeaux Meet the Soul of Japanese Soy Sauce

The barrels used for fermentation are anything but trivial — some come from historic Bordeaux châteaux. And that’s where the magic happens: barrels that once held Grand Cru wines are now paired with Japanese soy sauce. This unique alchemy gives the sauce an incomparable depth. We often speak of a wine’s terroir… but here, it’s a soy sauce that unites the terroirs of Japan and Bordeaux. A soy sauce born between two worlds.
