At Pavillon Yuasa, a unique Japanese culinary experience in Bordeaux, enhanced by this soy sauce created in a wine cellar using a traditional Japanese method.

This artisanal soy sauce was inspired by the meeting of two traditions

The two are Yuasa Shoyu, founded in Japan in 1881, and Château Coutet, an organic winery located on the slopes of Saint-Émilion.

For over 140 years, Yuasa Shoyu has been producing shoyu using natural, time-honored methods, without additives, and with meticulous care at every stage of fermentation.

Today, the company is managed by Mr. Shinko, a master shoyu brewer whose expertise embodies the spirit of living Japanese tradition.

A wine enthusiast, he approached Adrien David Beaulieu of Château Coutet.

Château Coutet has cultivated its vines with complete respect for the soil and biodiversity, without pesticides or herbicides, for several generations.

The estate is renowned for its complex red wines, made from grapes grown with patience and integrity.

From this encounter between East and West, the project to create a locally fermented soy sauce was born.

Adrien and Madina took on this challenge with Mr. Shinko, in the winery of their estate “Notre Sainte Terre,” located in Sainte Terre near Saint-Émilion, and created Moromi Shinko soy sauces and misos, named in homage to their Master Soja. These soy sauces are rich, balanced, and carry a dual cultural heritage.

Our cuisine is distinguished by the use of Shinko soy sauce, organic and artisanal, made locally in France using a traditional Japanese method in collaboration with the Notre Sainte Terre vineyard, a mixed-crop winery in the Saint-Émilion region.
